Hi, this may not be the proper place to post a recipe but these no bake cookies are easy and yummy. Here is the recipe.

2 cups raw walnuts
1 cup unsweetened coconut, finely shredded
1/4 cup raw honey
1 teaspoon vanilla extract
Pinch of sea salt.
Blend all ingredients in a food processor for a minute or so, until a granular, moist dough forms.
Scrape the dough into a bowl and form the mixture into round balls 1 1/2 inch diameter. . On a parchment lined baking sheet press each ball between your palms to slightly flatted into cookies. Place the sheet into the freezer for 30 minutes. Store cookies in a tightly sealed container in the freezer for up to 3 months.

Variation, My wife forms the dough into 3/4 to 1 inch balls and places them in small cup cake papers and then freezes. The mixture freezes but not solid. They can be removed from the freezer and eaten without thawing. This is a great little treat, healthy too. You can also add cinnamon to step up the flavor even more.

This recipe came from "Shutterbean", called "Vanilla Walnut Shortbread".

Give it a try...Peter
